有關於KEEP意粉既問題

我想問,如果我整左40個人既份量既意粉,
想放5-6個鐘,
除左保暖之外,
我仲想問下有咩方法可以,
唔令D意粉焗到漲哂?

同埋響呢個情況,我應唔應該將D意粉同D材料同汁搞埋先,
定係就咁放D材料同汁響上面,定係食果陣先落材料同汁?

if you can reheat the pasta before serving, try blanching (run the hot pasta in cold water until it cool down completely, drain, and add some oil) it right after you cook the pasta (also keep the pasta 70% cook only.  then right before serving, put everything together...

so its best not too mix the sauce with the pasta for that long, if you can.

Or if you don't have a choice or the time, then i think you can put cook everything together (but still keep the pasta 70% cook only) and deep freeze it all together.  Just reheat it before serving.  The faster you can drop the temperature, the better its going to come out when you reheat it.

What kind of pasta are you making ar?  it might be different for different type of pasta wor...

想放5-6個鐘~~
真係好難有個方法俾你阿~
一般意粉熟左,最多放1個鐘,才發漲,一般分希汁同濃汁,吸汁程度都吳同,
方法係無,除非將d意粉煮到8-9成熟,再叮熟佢~
