For your situation, i think you can try the self-finance one, which is also offered by PolyU AF.
My asso grad GPA was 3.7x, still can't be admitted by PolyU acc.
this program just last for 2 years, form this yr onward, it accept student to apply grant loan, the criteria are the same as the UGC funded guys.
but you can save one year of study so that you can apply for QP and be qualified one year faster
For your situation, I think your GPA is not very high as you are just a yr 1 student. You better wait for your asso graduation before applying any institutions.
Actually application letter is not important, even interview is not important. The only one important thing is your GPA.
