i have been there not much places really , but can go to vitoria and sleep over night join some activities, or go to lounge is pretty good.
vancouver you can think about going to the Gastown, Stanley Park, Capilano bridge, and richmond eat, love the food, or can go to i think is river rock hotel to gamble?

Shopping - Metrotown - biggest in Vancouver (Burnaby)
go snowboard/skiing in winter - not a cheap activity compared to just sightseeing - Whistler/Cypress Mountain/Grouse Mountain
seriously..nothin much to do compared to Toronto
