請問各位CHING, 點樣從香氣或味道, 分辨出一支酒仍未係時候飲, 已經在頂峰, 及off the peak (從頂峰回落) .  謝謝

its very difficult to tell the stage of evolution of a wine by its aroma, on the palate yes, however we can certainly tell if the wine is young or old vintage by its nose or color.
on the palate, its still the feeling of tannin, acidity and fruit if there are in harmony, an experienced wine taster can tell from the sense of each vital component whether the wine is very young (premature), getting there, fully matured or going downhill, however the most difficult part is to tell if the wine is at its peak, because before the wine goes down no one can tell it had reached it peak.

what is the meaning of "off the peak " ar ???  can you guys explain it in a simple way, thkx

Easiest way is from the color (though not always correct)....

Purple - too young, not ready
Ruby - ready, but will improve
Garnet - at peak, drink soon
Tawny - declining

You can tell from the palate if this is an aged wine, but very difficult to tell (for an aged wine) if it is still on the way up or going down.
