係個樽入面加baking soda再加酸性野,當baking soda 受到酸性野時,係咁搖佢,佢就會產生CO2,令樽口個酒塞爆出黎,

Like #2 has said, it's the chemistry of hydrogencarbonate with acids, and also the pressure theory.
When the gas was evolved so much that they have no room to stay, they will exert a large pressure on the bottle. When it compensates the friction between the cover and the bottle, it will shoot out. Physics
